This slice is one of our family faves for a go-to snack. I seem to make this on a weekly basis as it gets consumed very fast! I just call it my almond cashew date slice. It’s seriously easy to make, so healthy and just a great well balanced snack when you want something fast for sustained energy.
Ingredients include:
150 grams - Cashews
150 grams - Almonds
160 grams - Dates
40 grams - Coconut oil (melted)
60 grams - Almond or peanut butter
40 grams - Cranberries or Apricot (dried)
50 grams - Honey
1 ts - Vanilla extract
1 tsp - Cinnamon
Sea salt (pinch)
Blend almonds, cashews and dates in a blender until roughly chopped. Add cranberries, melted coconut oil, almond or peanut butter, honey, vanilla extract, cinnamon and salt and blend until well combined. Transfer mixture into a tin (about 20x20 cm) with baking paper. Press mixture evenly into pan and place into the fridge for a minimum of an hour. Once firm, cut into squares and store in airtight container in the fridge for up to a week, (if it lasts that long)! ;-)
