These delicious coconut almond “snowballs” make a great gift wrapped in a sweet Christmas box or bag, or look festive adorning the table. They are high in magnesium, calcium and potassium due to the almond content and are just so tasty!
2 cups Coconut (desiccated)
1/2 cup Almond flour
2 cups White Chocolate buttons
1/4 cup Coconut Cream
3 tbs Coconut Oil
1/2 cup Puffed Rice Cereal
1/2 cup Almonds (whole)
Directions: In a blender place almond flour, white chocolate and 1 cup desiccated coconut and blend. Add coconut cream and coconut oil to dry mix and put it all in a pan to heat until melted. Add puffed rice cereal and the other cup of desiccated coconut and mix together until combined. Roll 2 teaspoons of coconut mixture around each whole almond and press into a ball. Roll in reserved desiccated coconut to coat and repeat. Serve or place in airtight container in fridge. Enjoy!
